Tasty Lamb Casserole

This tasty lamb casserole takes on the attitude of a French stew with the delicious combination of white beans, lamb and sausage but is baked in the oven to complete the cooking. Prep time is a little longer than other recipes but a great way to prepare this recipe is to prepare the dry beans ahead of time, like the night before.

Prep time: 30 minutes

Soak time: 1 hour

Cook time: 1-1/2 hours

Bake time: 1 hour

Oven temperature: 325 degrees

Ingredients:

2 cups dry navy beans

1 pound boneless lamp, cut into 1 inch cubes

1 cup chopped carrots
